3 cups of grated apple
2 teaspoons baking power
1/4 teaspoon sea salt
1/4 cup coconut oil
1/2 teaspoon cinnamon
1 teaspoon vanilla
2 cups wholemeal spelt flour
1. Preheat your oven to 180°C
2. Combine apple, baking powder, salt, eggs, oil, cinnamon and vanilla into a bowl and mix well.
3. Add the wholemeal spelt flour and mix through lightly. It’s important not to over-mix so just until it’s combined.
4. Spoon into a muffin tray
5. Bake for 30 minutes or until a skewer comes out clean.
These are nice served with natural yogurt, or a spread of ricotta.
You can switch out the coconut oil for olive oil or butter.
You could also switch the wholemeal spelt flour for almond meal.
