Apple Spice Porridge with Walnut Crunch
With all the flavours of Apple Pie, this breakfast recipe will give you a boost of energy and keep you full until lunch time.
Ingredients
1egg
Spices – cinnamon, cardamon, nutmeg, ginger
¼ apple grated
2 tbs almond meal
1 tbs chia seeds
1 tbs ground flax
½ c unsweetened almond/coconut milk (carton)
Vanilla
(Serves 1)
Directions
Add all the ingredients to a small saucepan and simmer on low heat until the mixture thickens.
Serve with toasted coconut, walnuts and a scoop of natural unsweetened yogurt.
Note
It’s important to stir this continually as it’s cooking so the egg doesn’t split.
Take your time and enjoy the process of stirring and watching your breakfast come together.
