Beth’s Fruit and Nut Bars
These fruit and nut bars are super healthy. I guarantee, they'll keep you full for a long time!
Ingredients
1 cup of dried fruit ( I used apricots, a little pear and sultanas)
1 cup of nuts ( I used cashews, chopped almonds, walnuts)
1 cup of almond meal
1/3 cup melted coconut oil
1/3 cup ground LSA
2 eggs
Directions
1. Preheat the oven to 180 degrees.
2. Chop the fruit and nuts
3. Place the fruit, nuts, almond meal, coconut oil, LSA and eggs in a bowl.
4. Mix to combine.
5. Spread into a loaf tin lined with baking paper and bake for 35 minutes or until a little golden on top.
Note
When you’re looking to change up your regular breakfast, this makes a nice change. It’s a super healthy bar, and I guarantee you won’t be hungry for a long time!
Also, nuts in particular can spoil if kept too long. This is a good way to clear out the stash and keep things moving in the pantry.
