Cauliflower Rice
Cauliflower rice is a better choice than white rice. More nutritious, and I promise you won't miss the rice!
Use this recipe as a base for a salad, to go with a curry or as a side.
Ingredients
1 cauliflower – grated or finely chopped in the food processor
1 onion diced
1 tsp chopped garlic
1 tsp turmeric
Juice of a lemon
handful of sultanas
Directions
1. Cook the chopped onion in frying pan (dash of oil and salt) (for about 3 mins)
2. Add finely chopped garlic and turmeric (about 1 min each)
3. Add grated (or rough blended) cauliflower (and another dash of oil) (cook for about 5 mins)
4. Add sultanas (2 mins)
5. Add lemon juice (brings all the flavours together so don’t be shy with it!)
