Crispy Chicken with Steamed Veggies
Going back to basics with meat and vegetables - you can't go wrong!
Ingredients
4 large chicken thighs with skin on.
1 head of broccoli and ½ cauliflower
2 Tbs Chinese 5 spice
1 tbs paprika
Salt and pepper
Directions
1. Lay the chicken on a sheet of baking paper an sprinkle with the spices and salt and pepper.
2. Pop another sheet of baking paper on top and bash the chicken so it’s flattened!
3. Heat 2 Tbs of oil in a large saucepan and place the chicken skin side down in the pan. When the skin is crispy, turn the chicken over to cook through.
4. Steam the broccoli and cauliflower in a pot and serve with the sliced chicken.
Note
My kids love this crispy chicken.
I usually have a bowl of cooked quinoa in the fridge so meals like this can be bulked out a bit for my teenage son!
