Green Goodness and Scrambled Eggs
This is a simple dish that always satisfies. It's clean eating and will fill you with energy.
Ingredients
A big handful of spinach or kale
1/2 head of Broccoli – chopped finely
4 brussel sprouts
1/2 avocado
Fresh parsley
Squeeze of lemon
4 eggs
Splash of milk
Salt and Pepper
Serves 2
Directions
1. In a small pan, melt 1 tsp coconut oil
2. Add the greens and cook for 2 minutes
3. Crack the eggs into a bowl and whisk with a splash of milk, salt and pepper.
4. Squeeze some lemon over the greens then pop them on the plates.
5. Melt 1 tsp of coconut oil in the same pan.
6. Add the scrambled eggs and stir until just cooked.
7. Serve with the greens.
Note
This is definitely my favourite brunch choice!
I often sprinkle the greens with sunflower seeds. – And of course, just use whatever you have in the fridge for the veggies! You can’t go wrong.
