Any chopped green veggies. – It changes depending on the season
Avocado (about 1/4 of an avocado per person)
1. Heat 1 tbs coconut oil in a small pan
2. Add the veggies and cook gently for a few minutes. Add salt and pepper.
3. Boil a small saucepan of water and poach your egg.
4. Serve the greens on a plate with the egg on the top. – And a sprinkle of sunflower seeds.
When I simply can’t think what’s for lunch, I always go back to this one.
It’s so simple, and really takes just 10 minutes. You’ll feel good on the inside after this one!
