Healing Banana Pancakes
Bananas are a great source of energy. Contain potassium, which is important for maintaining blood pressure and heart function. Not to mention, the sweetness of bananas means you don't need to add sugar to your baking!
Ingredients
1/2 c Rolled oats
1/2 c Desiccated coconut
1/2c Milk of your choice
3 Eggs
1/2 tsp Cinnamon
Vanilla
1tsp Baking powder
1 Tbs Ground flaxseed or chia seeds
1 Banana smashed
Natural greek yogurt to serve
Maple syrup to serve
Directions
1. Combine the oats, coconut, milk, eggs, cinnamon, vanilla and baking powder.
2. Fold through the banana
3. Let the mixture rest for 15 minutes
4. Heat a pan with a little oil. I use coconut oil or butter.
5. Cook over a low heat and flip when brown on one side.
6. Serve with a little maple syrup, a dollop of yogurt.
Note
These are a favourite in our house, as they’re filling and taste so good! – We have them for breakfast or even lunch!
The banana will sweeten the pancakes, and you might find you don’t need to add the maple syrup.
My top tip with these pancakes is to be patient! Don’t flip too soon, and keep the heat low.
These are also nice served with some berries or sliced banana. – Enjoy!
