1 cup cooked kumara or sweet potato
1 1/2 cup almond meal
1/4 cup olive oil
3 Tbs honey or maple syrup
1/2 tsp salt
1 tsp cinnamon
1 tsp baking soda
1 tsp apple cider vinegar
seeds and nuts for the topping
1. preheat the oven to 180 degrees
2. Combine all the ingredients except the seeds and mix in a large bowl.
3. Pour the mixture into a lined loaf tin
4. Sprinkle the top with seeds and nuts
5. Bake for 1 hour
This light and soft loaf toasts well in the sandwich press and is a great alternative to regular bread. You’ll feel nourished after a slice of this.
(I also slice it up and freeze it)
