Lentil and Tomato Soup
This spicy soup is perfect for cold Winter days. Did you know ginger is one of the healthiest spices on the planet? Loaded with benefits for the body and brain. It's anti inflammatory and great for digestion.
Ingredients
1 c lentils soaked for an hour and drained
1/4 c Olive Oil
Pepper and salt
1 Tbs grated ginger
1 tsp chilli flakes
1 Tbs chopped parsley
500 ml hot water
1/2 c tomato puree
1 onion
Crushed garlic
1 tsp Paprika
1 tsp Cumin
2 bay leaves
1 L stock
1 tin of crushed tomatoes
Directions
1. Heat the oil in the pot and add the onion and pepper.
2. Next add the garlic and ginger
3. Next add the chilli, cumin, paprika, bay leaves and lentils. Cook for 5 minutes
4. Add the water and stock and salt and bring to a boil. Reduce and simmer for 30 minutes.
5. Add tomatoes and tomato puree and simmer until the soup thickens.
6. Take off the heat and serve with the fresh parsley
