2 c spinach
A handful of cherry tomatoes
2 rashers of bacon, sliced into small pieces
A handful of chopped mushrooms
¼ broccoli chopped
¼ c cooked quinoa
1 ½ c spinach
1. Fry the bacon in the pan.
2. Add the vegetables and quinoa and cook until soft.
3. Make some wells in the vegetable mix, and crack in the eggs. Cover with a lid until the eggs are cooked to your liking.
I always have a bowl of cooked quinoa in the fridge. It is handy to add to so many meals. In this meal it goes a little crispy, which adds a nice texture.
