Pumpkin spice Pancakes
Pumpkin spice and all things nice.
Who doesn't love a good pancake!
Don't wait until you go to the cafe for a pancake breakfast - Enjoy these healthy pancakes through the week!
Ingredients
2 Tbs mashed pumpkin
1 Tbs coconut flour
2 Tbs almond meal
1 egg
1 tsp mixed spice
1/4 c coconut milk from a carton
1/4 green apple
walnuts
Directions
Combine the pumpkin, coconut flour, almond meal, egg, spice mix and coconut milk.
Leave to rest for a few minutes.
Melt coconut oil in the pan and divide the batter into two portions. Cook the pancakes on a low/ medium heat.
Serve with slices of green apple and walnuts.
Note
This is nice with coconut yogurt too!
And what about slices of banana and almond butter?! Oh, the options are endless!
