Salmon with Salsa Verde
Jazz up your tray bake dinners with a quick salsa. It really takes ordinary dinners to a whole new level.
1 Piece of salmon per person 1 lemon cut into wedges A few cherry tomatoes 1 leek sliced 1/2 bunch silverbeet spinach For the salsa: 2 bulbs of garlic Juice of 1/2 lemon 1/4 c olive oil 1 bunch of parsley 1 bunch of basil 2 anchovies (Don’t tell the kids! It’s my secret ingredient!) Salt to taste
