Veggie Koftas
These are super soft, with Indian flavours and go so well with this mint/yogurt dressing.
Ingredients
2 potatoes chopped into chunks
1/2 head cauliflower
1 onion
3 cloves of garlic – diced
3/4 cup grated carrot
1 cup chopped coriander/ parsley
1 tsp garam masala
1/2 tsp curry powder
1/2 tsp turmeric
1 tsp ground ginger
3/4 cup chickpea flour
1/2 tsp salt
pepper
Mint / Yogurt dressing
2/3 cup soaked cashews
1/3 cup packed mint leaves
3 Tbs lemon Juice
1 clove of garlic
1/2 cup water
1/4 c natural yogurt or unsweetened natural coconut yogurt.
Directions
1. Preheat the oven to 180 degrees. Line a baking tray with baking paper.
2. Boil the potatoes and when they are nearly soft, add the cauliflower – When cooked, drain.
3. Saute the onion and garlic in a small pan until soft
4. In a big bowl, add the potato, cauliflower and mash.
5. Next add the onion and garlic, along with the coriander, garam masala, curry powder, turmeric, ginger, chickpea flour, salt and pepper.
6. Mix to combine.
7. Roll into balls (about 3 Tbs) and lay on the baking tray.
8. Bake for 30 minutes or until brown
To make the mint / yogurt dressing:
1. Place all the ingredients into a bullet blender and blend for about 20 seconds, until thick and creamy.
Note
You can store any left over dressing in the fridge in a jar or 5 days.
I love grabbing one or two of these veggie balls as a snack too.
